2 onions, chopped
2 carrots, chopped
3 TBSP coconut oil
3 cloves garlic, minced
2 TBSP tomato paste
4 cups bone broth
2 lbs tomatoes, cored seeded and quartered
1/2 cup fresh basil (or 2 TBSP dried)
salt and pepper to taste

Use Instant Pot Saute function to soften onions and carrots in oil. Stir in garlic and tomato paste and cook one more minute before hitting cancel to turn off heat. Add remaining ingredients and use the Soup setting for 10 minutes to cook. Quick release and use a stick blender to puree soup.

This is the recipe my husband makes. Keep in mind before you read the next statement that I don’t like tomato soup. This is so very tasty, and tastes nothing like the canned stuff in the stores. He makes rice to add to the soup for a hearty meal.
